Banana Bread Protein Muffins

Okay, so this isn't dinner (Dinner for us was just ham and veggies, nothing special). But it's good for afters or a quick snack.

Ingredients:


  • 1/2 tsp, Ground Cardamom
  • 1/2 tsp, Pumpkin Pie Spice
  • 1 tsp, Cinnamon
  • 1/2 cup Flour
  • 1 tbsp, Vanilla
  • 1 tsp, Baking Powder
  • 1 oz Milk (1%)
  • 1 Large Egg
  • 2 Scoops Vanilla Protein Powder (I used giant Fitness Whey and Soy)
  • 2 Large mashed bananas
  • 3 tbsp Apple Butter (could also use applesauce)
  • Non-stick spray or butter to grease the pan
Serves 6.

I didn't get too worried about what order to mix stuff up. Pre-mash the bananas using a fork and a large bowl. Crack an egg into it, throw in the spices. Mix it up. I added the flour last, eyeballing it until it seemed the right consistency, which was a half cup.

Grease your muffin pan. I used spray butter, but I think next time I'll use the real thing; the muffins stuck and had a hard time coming out of the pan though they tasted fine!

Evenly pour your batter into each muffin cup.

Bake at 350 degrees for 25 - 30 minutes.

I used the fork trick to make sure they were done before pulling mine out!

Pretty tasty, easy to alter, and protein! I'll probably try these again with more protein.
