Ingredients:
- 1/2 tsp, Ground Cardamom
- 1/2 tsp, Pumpkin Pie Spice
- 1 tsp, Cinnamon
- 1/2 cup Flour
- 1 tbsp, Vanilla
- 1 tsp, Baking Powder
- 1 oz Milk (1%)
- 1 Large Egg
- 2 Scoops Vanilla Protein Powder (I used giant Fitness Whey and Soy)
- 2 Large mashed bananas
- 3 tbsp Apple Butter (could also use applesauce)
- Non-stick spray or butter to grease the pan
I didn't get too worried about what order to mix stuff up. Pre-mash the bananas using a fork and a large bowl. Crack an egg into it, throw in the spices. Mix it up. I added the flour last, eyeballing it until it seemed the right consistency, which was a half cup.
Grease your muffin pan. I used spray butter, but I think next time I'll use the real thing; the muffins stuck and had a hard time coming out of the pan though they tasted fine!
Evenly pour your batter into each muffin cup.
Bake at 350 degrees for 25 - 30 minutes.
I used the fork trick to make sure they were done before pulling mine out!
